How we brew it
Pour-over, and the opening cup of the omakase

Nearly flat, so the surface is wide and the coffee drops below 60 °C within a minute — which is where this lot opens.
The farm
Nothing here was planted. The trees are a wild population growing under standing forest at two thousand metres, harvested by families who walk in and walk out again the same day.
It is the least predictable coffee we buy and the one we would miss most. We open every tasting with it because it resets the palate: it does not taste like what people expect coffee to taste like.
