How we brew it

15 g to 250 g of water at 92 °C, poured in four stages over three and a half minutes

Volume 120 ml

The wall is 2 mm thick and the rim turns outward, so the cup cools quickly and the aromatics reach you before the coffee does.

The farm

Corcovado sits on the western shoulder of the Barú volcano, high enough that the cherries take eleven months to ripen instead of eight. The Arjona family picks this block four times, and only the pass that falls in the second week of February goes into a separate fermentation tank.

We bought the whole tank: sixty-eight kilos, green. It will not be repeated. When it is finished we will take it off the menu rather than replace it with something similar.
